I'm working on a project using a K-type thermocouple with an MAX6675 module. I'm powering the PCB with an external SMPS (here's the link for reference:

Everything seems fine when the machine is running, but I'm seeing a bit of an offset in the temperature readings - about 7-8 degrees higher than they should be. Here's the interesting part: when I turn the machine off, the readings get much more accurate (only 1-2 degrees off) for a few seconds while the capacitors are still providing power.
I'm hoping someone might have some ideas on what could be causing this offset, or at least point me in the right direction to troubleshoot further. Any advice would be greatly appreciated!
